Salmon with Mango-Yoghurt sauce

Ingredients

  • 4 pieces of salmon, each 120g
  • 350 ml low-fat yoghurt
  • 1 tsp. mild curry
  • ½ tsp. Sambal-Olek or one little chili
  • 1 tsp. freshly chopped coriander
  • Juice of ½  lemon
  • 1 – 2  tbsp. mango-chutney
  • Salt, pepper

Preparation:

Season the salmon with salt and pepper.  Preheat the grill. Grill the salmon from both sides. Meanwhile, stir in the mango-chutney into the yoghurt and the curry. Season everything with the remaining ingredients.  Serve the salmon with the mango-yoghurt sauce.

 

Tip: Serve with basmati rice and steamed vegetable of the season.
